Why are pros building hexxdrinker on kat and not finishing it?

Hexdrinker is a very efficient item VS AP characters, and Katarina has some AD scaling on her abilities.

So while a full-AP build will be more efficient in the late game, and early Hexdrinker could help her survive early lanes VS mages without gimping her damage output too much.

So are you saying that I would rush hex drinker over gunblade? Or just as a bit of insurance against laning against mages?

Only as insurance VS mages, and only VS mages that would bully you or you couldn't kill to snowball.

The one thing to remember is that your burst damage won't be as high, since her AD scalings aren't as high as her AP scalings. But, last-hitting will be easier, since your AA's will do more damage.

It's one of those things where YMMV. Try it, see if it works for you. If it does, great. If it doesn't, then don't build it anymore. It's worth testing in unrankeds to see if you like it.
