Does anyone else not see the point behind banning champions?

If champions are too OP to be fair to play against, that's up to Riot to fix. Allowing people to "ban" these champions is a design flaw. It's like saying "just in case we can't do our job, here's an extremely arbitrary safety net."

Besides, can you honestly say you're good at this game, and can you honestly say you're a high-skill player, if you reach Diamond without knowing how to play against Blitzcrank because you ban him every time? Can you really say you're good at the game?

This isn't the only reason why I only play normals, but it is one of them.

It's actually for competitive/high level play, so you can have a larger variety of team comps that would otherwise be destroyed by 1-2 direct counters. The fact that it's become just a "ban whoever is OP" in competitive just shows how well Riot balances.

While some of what you said is true, another reason for bans is that you target a particular player who plays a specific champion very well. Like FeniX on TL, you should basically be banning Azir against him every game or you have a good chance of having a more difficult match. While you can try to ban out champions who counter a specific team comp(s), except for ones that hinge on one specific champion, you can usually run a champion to fill the banned champions role, it just may not be the same. This worked better when there were fewer champions, but with so many being released and RIOT reworking older champions to make them viable, banning to counter specific comps seems less ideal to me and it is easier to ban champions you have difficulty with or are stronger on specific patchs(though this is more RIOT's need to nerf said champions or buff others).

It's mainly so you can play riskier team comps while removing the reasons those team comps are risky. Only premades and really high ranks do that though, so for most people it's to cover what they are not completely knowledgeable about.

Banning is used differently in solo que and pro play.

-In solo que, its just "Ban whatevers strongest".

-While the pros do a mix of banning the top tier picks, and targeted bans since they know their opponents.

They also ban certain champions that could hard counter what they are going to build. LIke if they are building a "Rush the enemy carry and kill them quick" comp. They will most likely ban Janna.

And if there were 0 bans. The game would suck so hard it wouldn't even be worth playing to be honest.
