I am having trouble understanding how ornns brittle works

The wiki is not helpful either.

So attacking the enemy consumes brittle. But does it also deal the %health damage, or do I need to immobilize them to do that?

And as far as I know, ornn has no way of triggering brittle other than the knockup on his E?

Yes, the autoattack on an enemy with brittle does the %HP damage. About the immobilization, Brittle makes ccs last longer. Say, Ryze root for example, or Nasus wither

Edit: His brittle is applied by his ultimate both coming at him and going away from him. His firebreathing also applies it (i think w? Dont quote me if im wrong tho lol)

Slows aren't enough to trigger the effect. It has to immobilize them.

I could have swORNN that at one point, the brittle lengthened nasus' slow

The Nasus slow is poor taste unto itself.

Brittle is consumed upon an enemy being hit with hard CC (snare/stun). After which it boosts the duration of that CC and damages the enemy. When an enemy is under the effects of Brittle Orrn can auto attack to proc it himself.

Attacks become immobilizing, thus activating Brittle and dealing bonus damage. Regular CC works too.

Short answer is that ornn's auto attacks do a slight knockback to brittle targets, which is immobilization, and hence lets him proc the bonus damage.
