How does Kindred's ultimate work with Tahm's thick skin? Will he continue building shield when taking damage, thus resulting in a shield that is actually larger than his maximum hit points?

well, I assume not, otherwise kayle and etc could keep his health pool larger.
His grey health, is actually indicated by the percent of his health lost
