How do you beat a Jax late game?

Team coordination. There aren't many champions to choose from that can beat a late game Jax 1v1.

Usually you want to abuse his weak early game so he doesn't get to late game as there is not a lot you can do versus a full build split push tank assassin.

Jax needs to be 2v1ed or 3v1ed if he is ahead, and if your team doesn't pick hard CC the match can be thrown in the lobby. So grab a stunner and stay together.
