I think draft and blind should consider rank when it's doing it's matchmaking.

I tend to stray away from ranked as much as humanly possible because of the stress it seems to induce. I typically will place each season, play very little of it and just stop. I try to only play draft and blind pick because I don't have to worry so much about the stress and aggravation you get from losing.

But it's really fucking hard to have fun just playing normals when you start getting shit on by people 3 leagues higher than you and half the enemy team is at least 2 divisions higher than anyone else on your team.

No. Normals is a place to have fun and relax. If you want to be placed with people strictly around your skill, you play ranked.

Normals is the place where iron can team up with challenger. If you take it too seriously and care about win/loss sounds like your perception of the mode is not what riot intends.

If you're facing certain people in normal, it means you would be facing them in ranked as well (after playing enough games to reach your appropriate MMR).
