Blitzcrank completely warps the game when you are against him as a squishy

It turns league (especially bottom lane) from the usual CS/Poke etc. game, into a minigame of "dodge hook every 20 seconds", and even if you are good at the minigame, say you dodge 5 hooks in a row. Eventually you WILL slip up and get hit by that 6th hook, and god forbid you do because that is a guranteed kill right there. And you can't poke him beck because he will just sit at his tower waiting for you to get close enough to land that perfect hook.

TLDR: A champion shouldnt be defined by 1 guranteed kill skillshot. It isn't fun to play against and it isn't healthy.

I will 100% Ban blitzcrank if i ever play a squishy adc/support.

If you run ahead of your creep he will get you, basically the only rule you need to follow.

I have basically 100% banned blitz since personal bans were a thing.

I don't know any other champ where landing a basic ability almost guarantees either blown sums or a kill and it's very annoying. Even if I'm not playing a squishy, and even if I'm great at positioning so he never grabs me, theres 4 other folks on my team and at least one of them is certain to be a squishy, and I don't like the constant potential to be thrust into a 4v5.

Ive run Sona and Nami so many times against a Blitzcrank or Thresh, all I need to do is keep back during lane phase and never even begin to harass until I see him use it

Yep, he does completely change the game, but this also has its own weaknesses. Furthermore, Blitz is pretty strong, but not unbeatable - there is a reason he is RARELY picked in high elo - it's because at high levels of play, his hook predictable and easy to dodge, and if you don't land hooks as blitzcrank, you essentially fail to do your job. Let me give you some anti-blitz tips:

1.) He has no way to protect his own ADC - if you can poke his ADC out from behind minions, and keep him from engaging on you, his hook becomes meaningless.

2.) His hook has a very long cooldown. After he uses it and whiffs, there is a LARGE window where he is basically useless. Take advantage of the window. Don't be scared if his hook is down.

3.) Morgana is an EXCELLENT counter to Blitzcrank. Pick. Morgana. Her shield essentially negates his hook. Failing that, Janna / Taric / Karma are all excellent picks to deal with a good blitzcrank.

4.) If your hooked, your teammate should immediately engage on the enemy ADC. Let me give you an example, let's say I pick 'support' Annie against a blitzcrank, Youd think this would be a shit matchup.. but I'll just sit on my stun while the blitz sits on his hook. If my ADC ever gets pulled, I will nuke the everliving bajeezus out of the enemy ADC, to ensure they don't win that trade. So in essence - CC the damage potential and the hook becomes meaningless. A well-timed exhaust can save the day here.

5.) Finally, and perhaps most importantly - you need to understand map pressure. A Blitzcrank almost always wins his lane by the threat of his hook, This means he will often be up on your tower, trying to push it. This is a very vulnerable position - Just Ping and ask your jungler to come gank. Blitzcrank is SO vulnerable to good, smart ganks. If he's spending his time under your turret, get yo' Jungler.

unless youre in like higher than gold, hes a solid choice to ban every match if you plan to play a squish (esp supp) since even if you dodge his grabs your teammates arent likely able to and generally if he grabs someone especially in teamfights its a guaranteed kill so the match will quickly be lost. Pretty dumb riot lets his grab consistently slip through the cracks even though most people lack the reaction time that is required to significantly decrease his usefulness (such a reaction time can be gained but only through an amount of practice that most people would consider is beyond the scope of a game played for fun, e.g. it would be training such as for pros vs practices such as for fun)
