Olaf is a champion that essentially forces a 1 for 1 trade in teamfights. When you play him, you're a flanker with the tools to stick to one target, and to avoid peel at the cost of losing resists. You're a diver, not a tank, so you will find poor success trying to initiate fights head on. Instead, let someone else initiate or catch a target out with long ranged CC, then throw your Q at their feet, so you can run up, auto, E, reset Q, Q, then run them down while refreshing your slow, and ulting if they try to peel you off. Towards this end, items and summoners such as:
as well as the Predator rune can be very useful tools to maximize your run down potential while you're immune to CC.
Additionally, between your passive and W, you become a lot more dangerous at low health, and can sustain yourself against a single, or low damage targets rather well.
Early game, if played as a jungler clear red side first, even though you'll run OoM if resetting axes properly, but as soon as you hit 3 with red you can try for some incredibly powerful early game ganks. Olaf is probably the strongest 1 vs 1 champion at early levels due to his Q reset and his passive AS steroid for getting damaged. You can abuse these to invade the other jungler, secure scuttle, or blow some summoners on low level ganks. If a lane, especially top lane burns their flash early, camping them and/or lane ganking them can set your laner up with a very easy and comfortable lead while requiring minimal effort, and potentially setting yourself up to slaughter their jungler should they try to counter gank. As you transition to teamfights, try to flank around and delete their backline while being immune to CC. Sure, you'll likely die or be forced out of the fight at best most of the time, but if you can take 1-2 of their carries with you, its very much worth it. Sometimes even splitting their backline from their frontline can be enough to win you a fight even though you might not get a kill, and their carries may scamper off to safety.
Like an oalf, you run around tossing your axe at people and hitting them in the head until they die. Ok here are some tips on playing oalf, he's all about the direct engage, think of him as a much less tanky mundo, you have to hit your target and then bash them in before they get out of range.
And to that end you want to focus on weapons that first slow your target down, and second speed you up. So high attack speed, and lots of slow gear.

in 1 word you mean
Yes that is one of his main items.
You need to get kills early, or you make the game 6v4. Luckily Olaf is one of the strongest early game champs in the game, so getting early kills isnt too difficult. But, it can be...and you will be completely irrelevant.
Olaf is a true stat-check champ. You either get a lead on your opponent or you're completely useless, as he's a melee champion that offers nothing to a team other than damage. However, his E allows him to build tanky and still deal decent damage, making his early-midgame potent. As long as you build him very tanky, he'll be a consistent damage threat for most of the game.
