In general, dodge them. All of them are avoidable (skillshots, delayed effect like Taliyah's W, or Yasuo's E-Q is short range and doesn't knock up until he passes directly over you, etc)
you can use most summoners spells during it.. as if riot wasn't holding your hand enough already
At least we can cleanse stuns, but try playing vs several champions with displacement/knockup/knockbacks. You will be basically permaCCed and you can't do anything about it.
Give us counterbuilds to %health true damage that isn't an attack speed slow and then I can see counterbuilds to knock ups.
Until then, accept that you can't build for everything.
