Mid laners taking barrier over ignite???
I noticed this when watching some pro's or high elo games that some mid laners would take barrier and not ignite. Why is this?

Mostly longer ranged champions like Xerath, Lux, etc
You should never even be in range of them to ignite them, you poke them down and finish them off with your ults when you catch them with a snare/stun. The barrier is 100% defensive based as you do it to protect you from being dove, which is about the only thing you can do vs long range mages (so as a long ranged mage you always expect it to be coming).
That's interesting because last night I played
vs
and killed her once by igniting her, but yeah I see your point.

How does Morgana die in lane
Same way anyone does: bad decision making.

Must've been one hell of a bad decision

I usually take heal/barrier on long range champions who I can't normally get in range to ignite with (velkoz). Or exceptionally squishy champions (old zilean, or heimerdonger for the troll-levels of survivability).
Defense less CD on barrier
Barrier vs Ignite.
Ignite is taken when you are confident that you will be able to secure kills against your laner or that at least you will be on even footing if you take ignite. Often times, barrier is taken to mitigate damage against a highly bursty champion such as Leblanc. Other champions like Azir are better off with barrier as he is more of a kiter and long range killer.
Exhaust fills similar role to Barrier in mid. Usage varies between matchups and personal preferences.
It's matchup specific usually.
Say you're playing
versus a
. If you're close enough to use ignite, the Zed is close enough to all in you. If you're playing Xer correctly, you should use your range to your advantage and poke/kill from a far. That's why you'll see people take
in this matchup since it'll reduce Zed's damage output if he gets close enough to all in you.
is usually taken when the enemy team has enough damage to burst you down, and you need some extra health to survive. Think about playing against a full damage
that has mastered the Ryan Choi instaburst combo. You won't even have time to
when you see the "!" above your head, but you will have time to
.
Same reason exists for taking
over
. One gives you extra health temporarily, the other replenishes missing health. If the enemy team can one shot you without the extra health, heal is worthless and barrier is the better spell.

Mid lane probably has the best Summoner spell diversity.
Ignite is good for assassins and duelists. Not good for long range champs who don't stay in cast range of ignite.
Barrier is good at preventing poke.
Exhaust can be used to counter Assassins.
Ghost is used on more Immobile mid laners to give them more mobility. You can increase that with the Distortion boots.
Cleanse can be used to prevent CC. Which could be important if the enemy has a good CC champ and your a target.
