We need more creatures champions!
and if I'm not mistaken, someone from Riot already said next champ after Gnar is going to be a creature as-well. any thoughts?

Creatures are fun but take a lot more work to make... human champions are easy because the models are already made and they just need to make small changes. With a creature you need to put more work into the looks, animations, sounds, abilities, and the list just goes on and on.
Not really - clothing and accessories for human characters can get incredibly involved very fast.
Also - Riot seems to really be pushing differentiating their champions. The silhouettes of each one are pretty different, along with different voices and sounds. It's kind of hard to keep making human champions of different shapes and sizes when they're all a very similar shape and size. So all the animations need to be really different and the models need to be heavily altered in the first place. No two champions really swing their weapon the same way, and a lot of them don't even walk the same way. Braum's walk animation isn't Darius's walk animation or Draven's walk animation. They all have a different bounce, a different feeling of weight.
I'd say with actually making the models? Creatures are easier. You can get really creative really fast. The only big problem I've seen with creature champions is pushing the champion aspect, as you can easily fall into the trap where it seems like one creature of a given species over a unique entity.
So I believe a long time ago (we're talking like season 1... maybe season 2) riot said that creature champs did not fit the theme of LoL. From what I've seen/heard the game back then was set in a far less dark world than it seems to be set in now and character interactions were told through the journal of justice. Hell the client used to even have a whole tab for this sort of stuff.
Moving to more recent developments the world the game is set in has gotten seemingly a lot darker, and the existence of the JoJ and the lore tab are no longer a thing. Also riot has been downplaying the influence of the actual "League of Legends" in their lore., New champ VOs no longer refer to summoners, etc. The point is these days the character stories are mostly told through much more in depth back stories and large community wide lore events. The game has become much more focused on the game itself rather than the lore and by this token the world in which it has been set has become more serious.
Now a few months ago there was a post, sorry I couldn't find it, in which a riot employee admitted that the games tone had changed and that creature champs were much more fitting. The only challenge here is that they said that it is harder to give a creature champ a really well formed identity. That said I believe riot is looking at more creature champs.
Sorry for the long winded reply but I just wanted to give you some context on the more creatures hype.
tl;dr riot used to not like creatures, game view changed, now they like creatures more. Expect more creatures.
