I am really looking forward to the next champion who is just a person with magic and weapons and fits the whole fantasy theme. Maybe that female void human people asked for a lot back in the day or... just a wizard or knight or something?

Also taliyah, jhin, ekko, illaoi, all recent releases Almost 90% of the roster is humans, if anything we should encourage more unique champs, like the void champions, everytime they release a void champ i get excited just to see how grotesque and alien they look like.

Camille is the ultimate lockdown champ and her cooldowns and spell ranges require her to dance around her opponent in terms of distance.
That being said, the reason you haven't seen Taliyah often is becuase she's pretty high skillcap and falls off pretty hard after laning.
The few I have seen were really good.

They are just armored to protect him from the recoil of his weapons.
His splash looks the way it does because of a miscommunication between the splash artists and the model artists, becuase his model shows him having real limbs.
Or perhaps his splash just shows how Jhin sees himself, as we never actually see his actual body, just his reflection. It might explain why he shattered the mirror. He sees himself as imperfect.

He's not a Cyborg though. Riot has confirmed those aren't robotic arms or legs, even though they look exactly like them. I get it though, I crave a champion based more in fantasy than science fiction too

Runeterra really isn't a standard fantasy setting, though. This is a setting that has air-ships, magically powered machines, and technologically augmented individuals. And, frankly, it has always been like this to some degree or another. If we're talking 'human with magic/tool' then we have:
That's already a pretty huge chunk of the cast. And I'm discounting here champs augmented in pretty much any way at all, even those that were previously just normal humans like Pantheon. You're calling for 'warrior with magic' as a thing we need when there are already a whole bunch of them.

When I think knight, I'm thinking someone more graceful and gentlemanly than Garen. Not someone who screams justice while slamming down six tons of solid demacian glory on a toddler with a stuffed bear, but someone who is just as kind as they are deadly.
