How do you lane against Pyke?
I could ban him, but I feel as if I should save it for others. I normally play Sion. I think I can dodge the hooks, but am less confident in my teammate. Also his stun is a pain.

you just cross your fingers and hope its a first time Pyke. Otherwise he mechanically outclasses every other support in the game, and realistically you cant actually play against him. All you can do is be passive, not get caught, and wait for your jungler.
If you're playing support, tankier ones have a much easier time surviving when compared to Soraka/Nami or other squishy champions. Immobile and squishy champions suffer the most against Pyke, but if you have reliable CC like hooks or stuns, use them to lock Pyke down. Once he's CCed, he pops like a balloon.
My least favorite matchups are probably Braum and Thresh. Braum can block your entire combo and jump backwards to allied minions or his ADC and Thresh can hook/flay you out of your E and leave you open to punish.
Bully him early, then begin sitting back behind minion waves after level 6 because that's when he gets his powerspike. If you see him leave lane to try and get a roam off, make sure you ping very early to warn your team to play safer and try to punish his ADC. Forcing a 2v1 during this time can net you a free tower or snowball your ADC. Even if Pyke steps out for a split second, focus the enemy ADC and capitalize on Pyke's inability to heal/shield.
For anyone else, save your flash or mobility spells for his ultimate. Sion in particular is an easy target for Pyke because he's immobile, has a huge hitbox, and doesn't have decent kill power / has a hard time finishing people off. I'd recommend building a ton of armor and saving your ult/Q just for Pyke and trying to peel for your team.
I've found its best to focus entirely on poking/killing the ADC, as you can't effectively poke Pyke down, and unless he seriously messes up, its hard to burst him pre-6. But yeah, squishy supports are a no-go for the most part. Tanky, CCh heavy supports are your best bet.
Just use
:
PASSIVE: GIFT OF THE DROWNED ONES When Pyke is unseen by enemies, he rapidly regenerates some of the health recently lost to enemy champions.
Pyke also converts his bonus health into bonus attack damage instead.
