The energies of the Rift require stalwart hearts and determined souls to hold true. Surrendering shatters the core bonds holding the nexus together.
Since the concept of winning in his game is blowing up the enemy nexus, surrendering only skips all the process in the middle and jump straight to the result, hence nexuses still explode.

In all seriousness, Sekai basically explained. You lose the game when your nexus explodes; your nexus explodes when you surrender because you lost. Stahp trying to make sense of basic video game logic like this >.<
Leaving a fist fight doesn't make your head explode in normal situations, but Mortal Kombat X still does it because it looks cool.
