What's the deal with Shyvana's ult, exactly?
I thought it's supposed to make you invulnerable to CC, but the enemy Lux was repeatedly able to hit me with her q in midair and it snared me when I landed, just like any other jump. What gives?

You were snared after you landed Her Q didn't stop your or interupt your ult you made it to your target location. She doesn't immune to CC, her ult just can't be interupted or stopped. It's like ulting in on Thresh and he just flays you away and you do no damage.
But it acts exactly the same way as Aatrox Q, which doesn't say "can't be disabled"?
You can knock back/displace Aatrox out of his leap, you can't with Shyv. When she reaches her destination, then she is affected if timers permit.
