So how viable is assassin Darius?
As in me getting fed, becoming an nearly unstoppable juggernaut, hunting down the 
who fed me as an twisted from of gratitude.

It's just not really viable. Darius really doesn't even need items to kill you. That's why he builds tank If Darius gets on top of you, him having damage items is the difference between dying in 1 second, and dying in 3 seconds. Either way, it's inevitable, but if he's squishy you might be able to kill him before he reaches you

That's not really assassin, that's duelist due to having sustain and some health from those items.
