Actual Question, how do I fight a lux

She seems kind of impossible to fight, her magic damage is insanely high, but also she has incredibly strong AOE, and usually those are balanced by like, poor range or the attack being advertized, but it's so hard to follow where her singularity is going to be and by the time it's landed it explodes immediately. And before that even finishes detonating she's probably winding up her ult to take off half of your health. Is there something I'm just not seeing?

I haven't played mid in a while, but I'll give it a go:

Avoid your own minion wave. Make her choose between harass and waveclear. If she uses it to harass, you should be able to push her under tower easily and then poke her under tower.

If you can't do this, then: Use your minion wave. MAKE her push the wave if she wants to harass you. Then call your jungler for a gank when she's over extended.

And as always, sidestep skillshots, don't try to outrun them.

I usually try to do it but, I can't play simple champions for shit. Like it's really weird but the easier a champion is, the harder they are for me to play. Seriously I'm pretty sure I make angels cry whenever I try to play darius.

Practice. Her E is her bread and butter, but she'll not be able to hurt you TOO badly unless she combos you with Q - AA- E - AA. Her mana costs are brutal so some people can just out-sustain her poke. If she walks up to auto you, she's probably close enough to dash into her face. DODGE HER Q. Her Q is her only real safety net if you jump her and she's not already under her tower. Evade her Q and gap-close onto her and she's likely boned... or at least going to have to flash out.

Mids that handle her well. Mobile assassins of all sorts. Tanky sustain champs like Maokai, Cho'Gath and the like. Other poke mages can attempt to beat her at her own game. Even short-ranged mages like Annie can obliterate her witha flash-Tibbers if you play smart. She is FAR from invincible.

My advice for anyone struggling to beat a certain champ is always this. Play that champ a few times. You will learn their weaknesses REALLY quick.

zyra or xerath mid is pretty good at playing her own long range poke game

You could play galio if you just wanted to be an unkillable wall

and of course, talon, zed, other mobile mid assassin etc can abuse their mobility to kill her

Yeah, she's kinda rough to lane against because she is really a lane bully when she is building damage. Magic Resist, maybe item 3102. She's pretty vulnerable to hard CC and if you can silence her and/or block/dodge her skill shots. you can basically force her to burn her mana until she has no choice to let up. As I already mentioned, she has very strong pushing power, so she has a tenancy to over extend. Coordinate with your jungler for an early gank, and hopefully a kill or at least a burn of her summoners, then your chances go up considerably.

Ahri Ekko Fizz Malzahar Leblanc Morgana all do pretty well against her, though depending on the champion you could opt to not fight her at all and instead roam to the side lanes or into the jungle and kill her allies. One of my favorite picks against her is Quinn since I can bully her during the laning phase and once late game hits I have easy access to the back line and can pretty much 1 shot the enemy carries.

In general though get used to the wind up animation for her E and you can start to dodge it before it even lands, once you get the hang of it prepare to be called a scripter by some frustrated lux players.
