How do you beat Trundle?
Pretty much title. I manage to lose to the guy unless somehow tahm or mundo slips through the ban / first pick. How (if anyone has) have you found success vs him?

well he is really strong but he was quite some weaknesses. he cant force anything, his damage without ultimate is mediocre and he has little pushing power. he also loses in short powerful trades as he needs extended periods to make use of his short Q cooldown and his frozen domain attackspeed. this means, champions like fiora, darius, garen are very good against him as they are just as strong and have better laning. gangplank is also decent because its a very passive lane in which nothing will ever happen but gangplank outscales trundle massively in map and teamfight utility.
play ranged.
build exactly what he builds, but have some hard CC in your kit. (bork, sunfire, spirit visage, merc/ninja tabi its all designed to win a 1v1)
play some champion with 175 auto range instead of 125, because you can harass him over the minion line, he cant, he has to path around to auto you back. keeping 1 minion between you or him will crush him.
dont over extend near a wall he will trap you. keep yourself in the middle of the lane.
trundles biggest fears are. 
(after level 3 or 4 aatrox just wins the sustain war, but trundle has the early base damages) 
are all great choices into trundle.
Well mundo does awful against him anyways.
What you want to beat him is mobility and high burst damage. Zed/Akali/Fizz come to mind. Atrox/ tryndameer/ jax / yi are also good options as they hyper scale like he does and they don't rely on defensive stats that he will just steal anyways.
In any case he is always a threat - I usually ban him because he is obnoxiously OP.
He is strong but nothing special. I don't play much top lane but Gnar, Darius, Vlad should have no problem vs him.
Honestly, Executioners Calling is a pro item against him, stops his dumb regen.
If Trundle has his Ult up, never fully engage him in lane unless your advantage is overwhelming. Even ranged champions lose to me needlessly in lane all the time when I play Trundle because they overcommit when they see I'm at about half-health and they blow all their mobility to get in my face when they would have been better just pushing me out of lane with another poke. Bait out the ult if you can, saving mobility to get around Trundle's pillar.
Trundle has good sustain and damage, but little ability to burst you. Higher damage champions with good sustain can sometimes lever the advantage to outscale him if they play around his ult and keep him off minions. Most champions who rely primarily on sustain and tankiness really can only hope to stalemate him, I think.
I beat trundles by going infinity edge or blade of the ruined king 1st on renekton (and by beat i mean 5-0ing them in the first 10 minutes kind of beating up) i've also beaten trundle with ravenous hydra 1st shyvana and W max katarina does surprisingly well 1v1 vs trundle i've personally never had much of a problem against trundle as far as laning goes
Yea trundle a champion who has a ton of steroids and steals your stats, he's really hard to beat in lane in the 1V1 he's who everyone mentions to pick when some other top laner goes out of control balance wise,
Trundle weaknesses become more apparent as the game moves out of laning phase, he has no ranged wave clear and no gapcloser, so he gets wrecked by siege comps,

I seriously can not understand why everyone always comes up with champs, the easiest way to counter nd play the champion you like are items and Summoner Spells...
You can make him useless with a few items and 1 summoner Spell:
against his Heal, For Tanks: 
or 
against his heals/sustain and his W ability and: 
against his Ultimate (repeating Magic dmg and Armor/Magic resist Steal). For Damage Builds: 
against his heal/sustain and Armor from his Ult.
And maybe for your support: 
also against his W ability.
Tank example Build: 
Should be great in the current meta (Knight´s Vow on adc (or Yasuo, Tryndamere, usw.) for good sustain)
DPS example Build: 
with this and if your support has shields and you should be able to survive ;)
Everything named here will be also effective against the rest of the enemy team.
