What do the pros use for VOIP? Do they just use discord or something. Or did Riot make a pro only voice chat?

Since Riot switched to "marksman", why do the pro casters still use "ADC?"

The second one is just because of habit. You still hear some prop players refer to raptors as "wraiths" simply because that is what they are used to and what their audience is usually used to. Casters sometimes use marksmen, but because of habit and the fact that the majority of viewers know the role as "ADC" they will use ADC.
Typically pros, if they are a streamer of have sponsors, they will use the specific VOIP sponsor, which recently has been discord, used to be a lot of curse voice as well. Some of them use Skype.
As Weathered said, it's still out of habit.
I still call Krugs, Golems and I still call Raptors, Wraiths.
