EDG lost to ITZ, when every single team at worlds has been proven to be one of the best in their regions and these 2 teams haven't played eachother before?

Because it's a wildcard team, all of whom have the least amount of resources getting put into them. When you have a far superior infrastructure compared to another team, you are expected to win.
It's the equivalent of the Broncos losing to the Texans. Yeah, they're both the best in their division, but it's not supposed to be close due to division strength.
