Stop playing melee based champions against him. Olaf is pretty good dueling one on one with melee champions because of his true damage, play ranged champions that can kite him and keep him down and if he lands an axe on you, don't feel bad to just disengage until the slow is gone. If you aren't willing or don't feel you are skilled enough to play ranged champions, try abusing the natural power in each of those champion's kits.
In Wukong's case, start with Q, and poke starting level one. Your Q outranges his E, so Q then back up and repeat until you can outtrade him.
With Maokai, his DPS isn't really high enough to fight Olaf, so play more passive and abuse your own passive to simply stay alive in lane. Everytime he E's, he loses life so abuse your natural sustain and poke down slowly with your sapling. That is a lane that is going to rely more so on jungle ganks unless he makes an error.
I can't help you with Fizz however, don't know the champion well enough, sorry, hope the rest of the info helps.
