What is engaging and disengaging

Starting a fight with an enemy champion, and putting an end to it.
Knowing what fights you'll win and which you'll lose is a very valuable skill in league. It also takes map awareness of knowing which allies and enemies might arrive in the duration of the fight. It takes positioning to know who you'll be able to attack safely. It takes knowledge of how your damage will calculate against your target's defenses. It takes knowledge of which skills are on cooldown. And of course an understanding of matchups in general.
Disengaging usually requires the right mechanical ability for it. "Run away" doesn't always work against most champions. Knockback is the most typical tool for it. Still, simple CC and mobility can get it done if a fight goes bad. Counter engage, in particular, is usually wide AoE CC or knockback used to prevent enemy teams from engaging on you in fights you don't want. In high level team's you'll see it in conjunction with poke usually.
Engaging is starting a fight. It's usually started by champions like
who can either do lots of CC in a wide area, aka Sion and Leona, or who can do massive damage out of no where like Fiddlesticks.
Disengage is stopping a fight. It's usually stopped by champions like
, or basically anyone with large AOE CC. Janna pretty much is the archetype of disengage champions because her kit has one huge AOE knock back, and one knock up, and a giant single target slow.
An example of Engage would be Sion ulting into an enemy team, then knocking everyone up with his Q after the first knock up from Ult. An example of Disengage would be Janna ulting in jungle and pushing the enemy team away from your team and everyone running, with Janna stopping any chasers with her slow or knock up.

Disengage is ending disfavorable teamfights for your team.
Evaluating what fights are favorable and disfavorable to take is among the most difficult skills to hone in league.
Engaging refers to when one team starts a fight or attempts to start a fight, while disengage refers to when one team ends a fight or attempts to end a fight.

Engaging is going in to fight and disengage means running away from a fight.
