do not eat the people that "pacts" with him, he eats everything and everyone else around that person.
I'd imagine they still get to choose. It's not like Tahm is saving them from death directly. Not in the majority of cases, anyway.
They weren't meant to die if they were saved.
Tahm doesn't really "save" people. He ropes them into deals that seem good, but are always on his side in the end. Whether or not they die afterward is unclear (Although it's pretty heavily implied that the gambler's body was transformed, and that's the Tahm Kench we see now, as he has had many forms, this is his most recent. None of that's 100% canon, but some red post hinting and bio stuff has pointed fingers).
Kindred's judgement is based entirely around if the person is accepting of death. If they understand and are willing to go, Lamb finishes it peacefully. If they're in denial, Wolf gives a violent reminder of mortality.
