What are exclamatory terms of each region?

or "By Odin's beard!"

But what would Garen say? What would a Noxian say, or a piltovan, or a zaunite, or a shuriman, or a bilgerat, or someone from the shadow isles or Ionia or freljord?

Like I could totally imagine being like "By the three sisters!" or some shit, but what would they actually exclaim?

From the story "City of Iron and Glass", there is the term "Janna's mercy!", which seems to be a distress call of sort. The one shouting it is about to fall from an elevator, but a wind gust helps him out here, so it seems that Janna has heard his prayer.

Is this the kind of stuff you mean?

Well, the Freljord has an exclamation of sorts. "Svaag", which is used by Sejuani in the comic Warmother, and used by Ashe in her VO.

"Svaag, warmblood! Was that your best? I killed you without trying."

"Heh, svaag. I've seen babies fight better than you."

Judging from the way it's used, it seems to be a generic swear, sorta like "damn".

Raffen says "By the Seven hells" if i remember correctly.
