Will Varus also get a visual update alongside his new VO?
If the darkin is controlling his body, wouldn't it make sense if Varus actually looked like the other Darkin, like Aatrox and Rhaast?

No. They wouldn't bother making a cinematic and all the comics with his current looks if they planned to drastically visually change him. He does looks similar to Kayn though, just more pale and purple and the darkin isn't in full control.
Varus only really needs a Texture Update if anything to further clean up his model.

he's getting a new splash only and VO
Varus is fine. He doesn't need to be visually updated if anything they could modify his textures but even then he doesn't need it bad. They don't all need to have a perfectly identical look.
