For the second one I like it because it stay more true to Taric as he is already is in game while the third one is more true to the Gem Knight aspect which is good still even though it a bit different from the already existed Taric as for the first one I think it is a good middle ground still retain the Taric while feel while embodying a good Knighlyness to it.
TL;DR
2nd one have that Fabulousness that Taric has while the 3rd one encompass that archetype of a Knight who is decorative with gem and the 1st one is a compromise of both still very knightly yet still fabulous.

I really love the first one but it looks (colour-wise) a lot like the new Victorious line.
