If you don't want Riot monitoring what OTHER programs you're running, then don't consent to the EULA. It's that simple. Of course, then you also can't play League. So you have to determine which is more important to you and you have to trust that they are only monitoring to make sure you're not using programs that modify your advantages in League gameplay.
