But I would still rather run into a Jack of all trade than a Master of one in blind pick. Like really you can ONLY play mid/top with X champ. No back up champ, flexibility to be in another role? Something for when you don't get your role.

I would always chose the one who is competent in many role over the one who can only succeed in one role because they probably won't get their desired role.
