This makes no sense
and it continuously happens to me. This is all solo players as far as I know, so why do i constantly get games with such a huge range of players skill. It's not fun at all.

Ignore everything else I've said - or at least put it aside. It applies to ranked games properly but I didn't realize this was normals.
Normals MMR is weird in that, as I've said previously, it's separate from Ranked MMR. This means even Platinum players, or even higher, can still look like ~Silvers or even ~Bronzes in a normal game to the matchmaking system. What's happening to you is just a side effect of the system, and is otherwise not necessarily a titanic issue so much as it is an inconvenience if you're aware of it.
Given that, it's normals, I'm not sure why you're putting so much pressure into making sure the game is perfectly even all the time.
I highly doubt they're all solo. In particular I would expect the bronze+plat to be duo, and similarly the plat+sub-30 to be duo. (I also tend to expect sub-30's in a games with ranked people to be smurfs of some sort, and similarly with bronze 5 people showing up in silver+ dominated games, and so not actually be as bad as their level/rank would indicate.)
Normals are also sometimes a bit messy in terms of ranks because normals mmr is separate from ranked mmr, and so theres plenty of people who have played tons of ranked and neglected normals, so their normals mmr is completely out of sync from their ranked mmr (i.e. diamond ranked players can have a 1300ish mmr in normals, well below what they 'should' have, but similarly bronze 5 people can also have 1300ish mmr, well above what they 'should' have).
I don't see a Ranked badge on your summoner profile, may I assume you just joined the Ranked Season in S6?
What most likely is happening is the system has no idea where to put you. You're a blank slate in terms of raw ability and the system needs to throw you in as many situations as possible to make a random guess where your skill level relative to other players may lie. Once you have a few hundred games under your belt (or down to just below 100 games if you're a consistent player) the system should be more consistent with who it pairs you up with.
So at my best I play like a plat 3 player. I find that hard to believe.

No I was ranked last season as silver as well as. This is one game but nearly all my games are this messed up. Even get diamonds against me sometimes and it's just crushing.
