Champs that are simple, but take a lot of practise to actually do well

Sivir If you just press E when a fight starts and hope for the best, this is a bad pick. Your spellshields have to be really on point for her to be worthwhile Nunu If you ever want to finish a channel of your ult, you have to track enemy skills MasterYi Gotta actually use his damage avoiding moves Poppy Getting the most out of her ult requires more planning than goes into half the champs in the game sometimes

Add some that you think people shouldn't pick in rank no matter how "simple" or "op" they are.

You forgot Katarina. Regardless of what people say about her, she's not easy to play. She can get away with failing a burst or not using Q and W before ulting in a 1v1, but teamfighting as Kat is not easy, especially in this meta of broken tanks and non-ult-channel-reliant assassins.

Yeah you need to know whether or not you can go in, which takes some experience

I dont think poppy is simple. Her skills may be, but you can just hop onto poppy and do well without a solid understanding of her.

And Vlad. Simple to just go through his rotation, but proper build and desicion making seperate "meh" Vlad's from the good ones

I'd almost argue "every simple champion", to one extent or another.

These come to mind: Evelynn Teemo Sona Soraka

I love playing nunu may not be the best but he is very fun. I tried playing master yi, it did not end well at all, sivir and poppy fall under my aram category they are fun too play but it seems like on SR they would have a harder time. Me i love playing morde have been for three years and his kit is really simple just sit their and charge up your abilities but it is kinda hard for someone who just picked him up to know when to go in and also to know that he can pretty much take 1-2 free turret shots depending on time in the game. ( more shots than just 1-2 if his w is active and he can q+e minion waves.)

The two I think of are Tryndamere and Nasus.

Both have simple kits, and are relatively easy to use, but you would be lying if you said it doesbt take a long.time to master them. (Just look at Rohammer or Sirchez)
