So how is it that i can have the most kills, most gold, most farm, and no deaths and get an S- with my Aatrox numerous times... i have multiple pictures on my FB id be happy to show any Riot employee. its extremely frustrating when i play one of the top laners with the lowest stats and go completely flawless due to skill and practice and get an S- but then i have a game where i die once and dont have highest farm or kills and i get an S. someone please explain this to me....

You sacrificed yourself for the greater benefit of the team, whereas earlier you hogged onto all the resources individually instead of being a team player. Yep, that's gotta be it >_+.

Mastery is based on how well you do on an individual champ, so over time it pushes you to get better. Also it is not solely determined by KDA and CS

The champion mastery system works on a percentile system compared to all other players in that champ/role combination, so for example to get an S+ your performance needs to be in the top 2% of all players on the champ in that role. It's not based on absolute numbers where if you have a kda over x then you automatically get a certain grade, it's all relative to how everyone else is performing on the champ in the role.

So for champ/role combinations that the majority are relatively poor at, if you do only 'good' you can still get a relatively high grade, but for champ/role combos that people perform really well at, getting a high grade is exceptionally difficult.
