Abandon ADC and play around Mid / Top / Jungle, whichever lane has the carry champ in it.
There is no reason to defend ADC if he is going to die anyway.
But those lanes often feed, when I try to roam to keep them ahead of their laner my adc dies instantly, and the reason in the first place the adc doesnt matter is because of them feeding some form of assassin that just one shots.

Well then you need to change your champion roster to playmaking supports or damage supports.
Also you shouldn't roam with enchanter supports that much. If you want to roam then pick stuff like Bard / Rakan / Thresh / Ali / Leona, they are pretty good raomer supports, enchanters, not so much.

If you REALLY want to keep the ADC alive then pick Tahm Kench, he can negate almost everything other than DOT damage and debuffs / delayed damage. But playing solely around the ADC is not something you can rely on anymore there are now (thank god) other threats other than ADC to worry about.
I feel this on a whole 'nother level. As someone who also mains enchanters, laning feels literally impossible. Especially if your carry role picks a ranged such as an ADC against for example a Jax.. it's already doomed.
I learned how to handle the lane its just outside of the lane I cant do anything the adc dies before I can even heal them and outside of that
How do I carry as an enchanter
You don't.
