Seriously...Why do we not have 8 bans.

Because there will never be enough bans. Say you play the next 100 games where whatever champions are considered OP now get banned EVERY SINGLE TIME, what will happen?
There will be an entire new wave of champions to become top tier picks.
I'm okay with 6 bans but if I had to choose a number of bans I would like I would pick 10. That way every player gets one ban and the flame wars for why didn't I ban X champion don't erupt from the champ select.
However speaking realistically I would like to know why don't we have reactionary bans?
Like the last ban per side should be made after a couple of players have already made their picks. For instance I see enemy pick Nami and Malphite, so I instantly ban Yasuo.
Agree with your statements, but Riots way of balancing is buffing counters and nerfing the effects of the buffs.
8 is a weird number to ask for. The two main justifications for an increase in the number of bans are that everyone should get 1 ban (for a total of 10) and that the number of bans should scale with the number of champions in the game (which would be like 14ish as there were 55 available champions when Draft mode was first released with 6 bans and there are now 129, but people usually only ask for 10).
Smite has 8 bans now and it doesn't even have as much champs as LoL does, it is a really simple change to put it.
