Just played against a Malphite
Playing as xin, and it would literally took me 3 whole seconds to auto attack once because of his E and 
build. Don't you think that's a little over bearing?

I would struggle the same way, but with Pre-reworked Aatrox
Malphite specifically counters AA heavy champions like Xin. He always has.
