How to play against pokey supports like lux, xerath and vel' koz?
I find it annoying to dodge alot of their skill shots while ccing and if me and support go for the adc or the sup, the other usually bursts me down

You have to be aggressive when their skillshot CD's are down, or just outpush them and forget about trading. If you know you're gonna play into them, try to pick strategically. Also be sure to run to the sides, not straight back. You can't outrun the skillshots, but you can dodge them without much hassle once you get used to it.
Contrary to popular belief, ADC's are also able to build MR items if they need to, so picking up an early mantle can help a bit; hexdrinker would be even better + it gives you a decent magic shield and some damage to boot.
They all lack mobility. If they overextend you should capitalize on that and rip them apart.
Hard engage or sustain sup.

Outright aggression is the way to go. In my experience people who play those sort of champions typically aren't support mains and expect you to just sit back and eat the harass, so if you just run at them they get super confused and panic.
play a
lane and laugh at their attempts to farm under their turret.
counter them by picking a sustaining support like
or
this would make it easier to stay in lane and soak exp, even if you aren't farming all that well
or you can pick a burst mage like
or
this makes it easier to abuse them and heir adc when their poke abilities are on cool down
or a wave pusher like
or
generally these champs make pushing a wave easier, and if your adc doesnt mind you farming it help you to build a bit more ap so you can deal dmg when focused on making trades.
Like Final Spark Lux stated, your adc can pick up some early mr so the poke doesn't hurt that much. it works well with a sustain lane.
