Nothing I usual do works anymore. Pantheon gets out scaled even when fed. Bruiser's get peeled and destroyed unless they build full tank. ADCs are useless outside of Jinx. Like seriously screw this Meta. Individual play sucks right now, and I don't want to duo queue. Does anyone have a strategy that works?

Positioning and teamwork is key. Here's a team comp I think is optimal:
One tank to defend the carries, one bruiser to ward off the assassins. The frontline. One adc to focus on surviving in teamfights while dealing damage safely from the backline, typically focusing the closest and safest target (usually the tank first). One support to defend the backline at all costs, and to support the frontline if needed. Either an apc to send burst damage from the backline, or a mobile assassin to delete an out-of-position carry.
if you can't beat em join em? i hate to say it but your options are a bit limited right now....
I personally believe that it comes down to what ADC you have on your team, and whether or not they build to kill tanks. A majority of ADCs are still building to burst squishies (rushing Infinity Edge first item).
However, I've found that swapping your build around a tank heavy team can help. Whenever I'm against a triple tank composition or if I'm fighting tanks for most of the game, I'll swap out my main damage item for a BotRK.
Another thing you can do is consider picks that have reliable % max health damage in their kits, such as Shyvana and Kog'Maw.

Ap mid/Support- Focus on playing ap champions that Synergize well with 
. Remember that targets who have slows attached to them buffs Liandry to 4% current health.
