Why Do More Advanced Players Build The Way They Do?

Whenever i build towards an item, i'm usually building towards a full item. This way any items i buy contribute towards Warmog's instead of part of Warmog's and part of Deadman's. However every player i see besides myself has a full inventory of parts of items. I've seen games where a player will have two daggers, a zeal, boots, and an inventory filled with general items for their role. Why is that? Is it just more optimized to get some stats for all your items now as opposed to rushing a full item repeatedly?

Also on the note of daggers, can anyone explain why ADC's build what they do? I don't understand why Critical Chance trounces AS and AD so frequently.

Usually in the case of Tanks, they'll build whatever seems most expedient. If they're building armor but suddenly the enemy Diana jungle gets a triple kill, it's usually worth it to swap immediately to MR and finish that armor item later. In most more offensive roles, people just buy until they can't spend anymore. If you have 1800 gold, that's enough for a Zeal, a Dagger and either another dagger or a shortswords, or boots. Money you leave on the counter means money you're not using to it's fullest. As a Sona Mid Main, i usually buy Faerie Charms to help myself out if i have any amount of free space and gold. If it turns out i don't need them, i'll sell them when i need the place.

So for jax at least. The champ. You wanna go item 2033 then on first back between lvl 2-4 go for item 1001 item 1055 item 1054 item 1029 item 1033 item 1042 sometimes even item 1083 ( which is purely early game to sell for more gold). The point is if i wanna build item 3047 for a fed bot lane, then I will build a item 3155 for my ap laner so i can trade better and worry less than if i just build full armor for the fed person. While with jax you normally really want to rush tri item 3078 but I will have weird items like item 2033 item 1055 item 1031 item 3211 item 3044 item 1001 instead of just a completed triforce. The reason is to prepare for early team fights or objs like tping to drag or rift etc etc. Its a preparatory thing even though the tri force gives me the most dmg, the weird items give me more stats for a fight or gank

Because it's about having as many stats as possible to try to create a power discrepancy between you and your opponent.

Hypothetically speaking, say you and your lane opponent go back with 1200 gold, but you decide to not buy anything in order to save for BF sword but your opponent comes back with a dagger and a pickaxe

Even if it's small, your opponent now has a slight combat edge over you because of those immediate stats, and now they can put you in a really tough position where they can either try to force you out of lane again because of the item advantage they have over you, OR they can keep you in lane and cause you to sit on even more gold

I understand that much. Using the BF Sword example let's say both me and the enemy laner are backing to spend gold, i would build towards the BF Sword, buying the item that's the most relevant but building towards the BF Sword whereas my enemy will have several items that may or may not build towards the B.F. Sword. I've noticed that they grab an item with relevant stats but aren't focusing on where it builds to most of the time. I.E. Olaf is top and building damage but once the enemy jungler becomes an issue he grabs a null magic mantle. If the enemy jungler became an issue then i would rush a full item that counters him.
