Could Cass please receive a nerf to her E healing since Conq is so bonkers on her?
Because I do not feel she should win a standing 1v1 against an Olaf with equal gold/ items. That will be all, carry on.

No thanks, just nerf the rune itself. Mordekaiser alone would be reason enough.
If the Cass kites Olaf and dodges axes properly then at equal gold then yes she should win even if Olaf ults Cass ult.
Her E heal needs to be removed entirely so she's properly punished by minions for spamming E on you early.
