Banshee's Veil? Zhonya's Hourglass? Quicksilver Sash? Mikael's Crucible? Mercurial Scimitar? There are a number of ways to stop Zed's ult but a lot less to stop the ion cannon of doom. You can even use Flash / a dash to distance yourself from Zed after he ults and as long as you're not already low health it'll barely tickle you on its own.
