Tokens and Keys should be able to convert into essence.
They currently do not and they really should.
Just two prime examples why off the top of head.
1.) You have excess tokens to upgrade a champ mastery and just don't want to do it because you'd rather keep 600 blue essence.
2.) You have your champ pool that you tend to stick with so you're not earning chests all the time and have a stockpile of keys in place.
This makes for 2 reasons.
1.) If you do have the stockpile of keys, people obviously have no need for it. 2.) They're more likely to buy chests and keys bundle because they're left with no earned keys.
