Is the pen from Abyssal enough to compensate for no Void Staff? Or should I be getting Void Staff instead of Deathcap?

So to break even, the enemy has to have 60 MR. Any further makes Void Staff more efficient in terms of penetration.

straight4free1 votesIf you desperately need the MR then you can get the abyssal early but sell it late game for a void staff. Even ADCs will have a BV that late in the game, so Void is better against all of your targets.

Unless you're against a team with intense poke no, your job is to burst down their squishies. Magic resist won't help you do that. Later in the game, if you get a clear shot you should be able to take the ADC down before anybody can react anyway.
