She is useless in lane against almost every champ... how does this add playability? Sure she does good later on but early game is probably the worst ive ever played

Katarina's laning is actually alright now. It all depends on the player though - she takes a lot more skill than before (heck, she takes skill at all) so a bad player wont be able to play her well.
