"im gonna do literally nothing and be zoned off 40+ cs or else im going to die over and over again""
If you're not competent enough to dodge it or to never let it happen, then tell me what mage vs assassin lane that isn't true. You're just giving the worse case scenario.
If you don't dodge their skillshot, you're dead or taking alot of damage.

The lane is often free if the kat knows what she's doing if her enemy laner is letting her E onto them (while they're an immobile mage. You can't just let her E behind you. That means you failed positioning correctly. There's 0 reason to ever get hit by the Q dagger landing on the floor, and 0 reason to let katarina E onto you.
Even then, sometimes it's just silly. People don't know how to build an advantage from short trades.
Picture this. You're

A Katarina just E'd onto you because you got in range.
She throws a dagger into the air, then Qs you, leaving a dagger behind you.
You have several options.
-
Stand there and take the dagger.
-
Walk back into the other dagger.
-
Walk to the right where there's nothing.
Lets say you take 3.
Now Katarina has 1-2 seconds before she can shunpo away, after the 1.5 seconds when she catches a dagger. You just Q W E her while she's immobile for ~3 seconds. You have enough time to do the QWE real quick, then walk out of the way.
How. do you lose
that. Trade.
I've literally never lost lane to a katarina. You just have to make mistakes that she capitalizes off of. Her roaming is pretty good, complain about that.
Level 1 shove the wave. Harass her.
Level 2, have a big wave. Harass her.
Get her to the point that if you dodge her daggers, she'll have to flash if she engages because she's too low.
She backs eventually, buy a
Good job you've won lane. Keeping dodging those 1.5 second delayed daggers.
