Almost every Jax I've seen has started flask, even when going into a lane that should be easy for them (Tryndamere, Riven, etc). I've always preferred going cloth/doran's shield against a lane I'd struggle in, and a doran's blade if I think I'm going to win. Am I doing it wrong?

Are you winning ur lane more then losing?
Then do you boo. Flask isn't a have to buy item. Starting items are all prefers or situational.
I'de say whatever helps you win the lane is the right thing
Dorans Shield is for high aa harass champs. Cloth is for the same reason but more well rounded (works well against Jayce). Dorans blade is good for an aggressive start, depends on what you prefer/are against.
The flask is both the default item (i.e. a lot of people learned to play with it) and a really good item for tops who rely on lvl 6 or have a later item/lvl powerspike. It provides decent sustain to champs that need it, as well as champs that have small mana pools but their skills use a large %. Having a flask is the only decent way to keep your mana up for non mage tops, such as gp or jax ;3.
