Where to find details about champion stats and effects of star level?

I can find lists of champion stats (not sure how they were sourced), e.g., https://rankedboost.com/league-of-legends/teamfight-tactics/champion-stats/ and https://leagueoflegends.fandom.com/wiki/Teamfight_Tactics:Champions#Stat%20List (Does anyone know where they got this data?) However, it only shows the health increase across star levels. How does increasing star level affect attack speed, attack damage, etc? Does it just double/triple the base attack damage when the champ is 2/3 stars? Anyone know where to find that info?

Nowhere, the answer is nowhere because the game was pushed so hard they broke it's spine and now there's a bloody hand puppeting it form within. Stuff like champion stats like armor, attack speed, damage are nowhere to be found. Same as simple things like combining items on the ground or even hovering one item over another to see what it makes or you know.... a flashing light that something in the shop is an upgrade to your bench / field ....

There are no official publications as of yet, Riot felt it either unnecessary or they wanted players to "discover" for themselves.

That said i can guarantee you that stats arent just flat out doubled up when a unit is upgraded, the exception being ability damage which can multiply several times over when the user advances in grade.

Brand for instance at lvl 2 has 6 bounces and 300% scaling (whatever that means) on his ult, at level 3 however, he has 20 bounces and 400% scaling.

To be honest i think attackspeed undergoes very minor changes usually but instead mana gains per hit seems to grow pretty substantial effects, as does damage resistance.

Instead most effective stats are locked on items which is why you´d generally want to build 1 hypercarry and a frontliner or 2 hypercarries and stick them behind a mob of frontliners.

Its all a huge RNG though so its easier said than done, assassin comps for instance in my experience are awful until the user obtains Akali or katarina(+items on the chosen one) at which point they can become insanely destructive.
