Seeing as Riot probably wants to promote the Lux/Ezreal pairing (sorry Taric/Ezreal), I imagine they might have a canon-version of how they met.
But on the other hand, they might go "And f%ck things up for the shipfic writers?! NO!", and not give any official event. Just like how they won't actually tell us what Vi's real opinion of Caitlyn is.

The second one; Riot has never taken a concrete stance on the relationships between champions beyond those that want to kill each other.

You won't find any official relationships outside of Ashe and Tryndamere's political union, but there are a plethora of hateships.

I remember someone at Riot saying they were excited to eventually show how Ashe and Tryndamere got together and how it wasn't just about political union, that they actually liked each other. It was at least a year ago that I saw this and I don't remember who said it :/
But yes, I'd love to see this as well. I'd also love to know what Katarina's opinion of Garen is. We know Garen finds Kat "beautiful but deadly" as it was in the old lore, but we never got a chance to see what her opinion of Garen is.
