This is still cannon as Cass is the "youngest and most beautiful" daughter of the family.
Considering unexpanded lore is just getting replaced instead of explored or expanded upon it would not surprise me if the name was not kept.

Katarina is now two lesbians that cut themselves with a sword hoping to heal the world and they're now a mudermonster assassin out for revenge and Talon is their adopted sister who has to live with the burden of being trans and an evil murdermonster assassin
In seriousness though I don't think they're going to replace it since Cass didn't have her family relations retconned, but if they scrap the Du Couteau family they're probably just going to turn Kat and Talon into Swain's new lackeys or something.

I'm fine with a lot of the story being the same but the name itself "Du Couteau" could be changed... It sounds more like a title (an awkward one at that) rather than a family name.
