Why are Noxians trying to capture her? They want to put her up in their arenas? Or use her as a weapon / battering ram for their enemies?

Did you miss the part when they said they wanted her in the arena?
The first one, but the idea of using a Void monster as a sort of bioweapon would be a pretty Noxian thing to do. Wouldn't put it past Swain. After all, when he's not lucid, Sion is basically just a monster now.
