Since Varus' story has been rewritten, I'd love for there to be a Dark Knight Champion

I've always had an interest in the "Dark Knight" archetype ever since Final Fantasy 4: a noble character who takes on a dark power to protect others, but may damn themselves in the process. Varus used to do this, though not for noble reasons (he just wanted revenge), and now he's all Darkin stuff. As for Kassadin, his lore is too old, so I say he doesn't count.

To that end, I'd absolutely love it if we had a new Champion, preferably a Demacian, who ends up filling the Dark Knight niche. The whole "Dark Is Not Evil" thing would be a really nice theme to explore.

That's the kind of thinking that gets lore completely nuked from orbit and replaced with something totally different (Varus )

I'd love a shadow mage that seems super dark and evil, but is really bent on using his powers to protect others, so that he doesn't succumb to some kind of curse.

I'm imagining huge barriers forged from a black sphere, long shadow whips that keep enemies at bay or pull allies closer. Not exactly dark knight themed, but a misunderstood "dark" champion no less.

Dark Knight Champion? I think Mordekaiser would fit the bill on that one, who is in desperate need of a comprehensive gameplay and graphic rework.__

Completely nuke Varus from the game as a character, give him a completely different story, and then introduce a new champ with basically Varus' story. That is so dumb, I wouldn't put it past the lore team.
