Well they are 2 different kinds of hunger. Tahm doesn't just want to eat people,he wants them to suffer. He first helps you by offering you a transportation to whatever you desire,but then he'll come back,years later and eat all the stuff that is precious for you,this inflicts a much more personal horror,because the person who looses everything knows that everything and everyone they loved is gone and it is THEIR fault,because they had to make a deal with him.
Gohm is much more straight forward in that he seemingly just wants to eat humans to satisfy his own hunger(not sure if I'm missing anything here though,I'm not that familiar with the diablo lore).
In the end they are 2 different horrors relating to hunger,I'd say Gohms is much more straight forward while Tahms is more psychological and sadistic(it doesn't even look like tahm eats the gambler in his lore,so the person that makes a deal with him actually remains unharmed).
You know that tahm Kench doesn't actually EAT, right? is a metaphor, he consumes feels.
